Sweet Potato Scones

These are amazingly easy and delicious scones that can be made vegan (or not). I got it from the website Pickles & Honey. Their recipes are perfect and they haven't failed me yet. I made their Spiced Apple Cider Cake (in the form of muffins) with my friend Alissa and they were also really good, but a bit more involved.

Ingredients

Wet

1/3 cup milk (any kind) 

1 tbsp apple cider vinegar (If you go with buttermilk, you can omit the vinegar) 

3/4 cups sweet potato puree (or mix it up with butternut squash or pumpkin) 

2 tbsp melted coconut oil + extra for brushing


Dry

2 cups Spelt flour

1 tbsp Baking powder

1 tsp salt

2 tbsp sugar ( I used coconut sugar like in the recipe from Pickles & Honey) 


Step 1- Preheat oven to 400F 

Step 2- In two separate bowls, combine the dry and the wet ingredients. 

Step 3 - Combine both bowls, mix till just combined then transfer to floured surface and knead till it resembles the picture bellow. 

Step 4- Cut into desired shapes and transfer to baking sheet lined with parchment paper. Brush lightly with a bit of extra coconut oil. 

Step 5 - Bake for about 15 minutes.

Eat with butter! So much butter.
